True Chesapeake Oyster Company (http://www.TrueOyster.com) farm-raises Chesapeake Bay oysters with a sense of passion, care and adventure that is unmatched in the industry. And we have a hell of a good time doing it! Our farm is in a unique tucked-away corner of Maryland’s Chesapeake Bay, where we have found what may just be the world’s best place to grow oysters. From this rare water, in a creek called the St. Jerome, we deliver an oyster experience that’s not too salty and not too sweet -- a deft, plump balance of sensations that we sometimes call “soft salt.” The Huckleberry will be our second oyster brand, sold alongside the Skinny Dipper (http://www.get-in-the-raw.com). The Skinny Dipper is 3 to 4 inch oyster targeted to anyone who wants to eat a good, solid Chesapeake Bay oyster, but particularly to folks having fun at oyster bars. The Huckleberry will be the Skinny Dippers slightly smaller brother. It will be marketed at 2 to 3 inches in size with a target audience of the slightly more refined and/or less oyser-experienced folks who are looking for a smaller, more delicate "cocktail oyster". Not a luxury/premium brand, though. That will be our next brand.
Nobody eats an oyster because they're hungry. They eat oysters because they want an adventure that other more boring foods just can't provide. The Huckleberry will be a great option for people who want to participate in the oyster adventure, but to do so with a slightly smaller oyster instead of a bigger, plumper, meatier oyster that lots of other folks demand.
